Tomato Parm Tofu

SERVES: 4 portions

RECIPE TIME: 20–25 minutes

What you need:

  • 2 cups Diced Tomatoes
  • 2 Tbsp Olive Oil
  • 1 tsp Minced Garlic
  • 4 Tofu Fillets
  • ¼ cup Grated Parmesan Cheese

What to do:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a small bowl, stir together diced tomatoes, olive oil, and garlic.
  3. Place tofu fillets in the baking dish and spoon the tomato mixture evenly over each.
  4. Sprinkle with Parmesan cheese.
  5. Bake uncovered for 20–25 min, until tofu is heated through and edges are lightly golden.
