SERVES: 6 portions
What you need:
- 2 lbs Diced Tofu
- 1/2 Cup Onion, Thinly Sliced
- 1 Tbsp Veggie Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Tomato Paste
- 1 Bay Leaf
- 1 Cup Diced Tomato
- 2 Cups Veggie Stock
- 1 Cup Grated Parmesan Cheese
What to do:
- Make sure to wash your hands before you begin.
- Heat oil in a large pot and cook onions and garlic until translucent. Add all remaining ingredients and this mixture to a bowl.
- Cover pot and simmer on low heat until all stock is absorbed. About 30 minutes.
- Sprinkle even layer of parmesan cheese on top.
