What you need:
- 2 cups Strawberries
- 1 tsp Lemon Juice
- ½ tsp Vanilla
- 2 cups Vanilla Yogurt
- 6 whole Graham Crackers left whole for crumbling
- Optional: Fresh Strawberries for garnish
What to do:
- In a small saucepan over medium heat, combine strawberries and lemon juice.
- Cook, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 8–10 minutes.
- Remove from heat and stir in vanilla extract (if using). Let cool slightly.
- Spoon yogurt into individual cups.
- Top with the strawberry compote.
- Crumble crackers over the compote.
