Rootin’ Tootin’ Veggies

SERVES: 6 portions

RECIPE TIME: 30 - 45 Minutes

What you need:

  • ¾ Cup Diced Sweet Potato
  • ¾ Cup Diced Turnip
  • ¾ Cup Siced Squash
  • ¾ Cup Diced Carrot
  • ¾ Cup Diced Red Onion
  • 3 Tbsp Olive Oil

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. Peel and dice all the root vegetables into ½ inch portions. Mix all the vegetables in a large bowl and toss with oil to coat.
  4. Bake until mixture is tender and lightly browned, approximately 30 – 45 minutes, turning halfway through bake time.
