What you need:
- ¾ Cup Diced Sweet Potato
- ¾ Cup Diced Turnip
- ¾ Cup Siced Squash
- ¾ Cup Diced Carrot
- ¾ Cup Diced Red Onion
- 3 Tbsp Olive Oil
What to do:
- Make sure to wash your hands before you begin.
- Preheat oven to 350F.
- Peel and dice all the root vegetables into ½ inch portions. Mix all the vegetables in a large bowl and toss with oil to coat.
- Bake until mixture is tender and lightly browned, approximately 30 – 45 minutes, turning halfway through bake time.
