Roaring Rosé Lentil Pasta
SERVES: 6 portions
RECIPE TIME: 1 hour – 1 hour 10 minutes
What you need:
- 1 ½ Cup Whole Wheat Penne Pasta, Dry
- 2 Tsp Olive Oil
- ½ Cup Diced Onion
- ½ Cup Diced Celery
- ½ Cup Diced Carrot
- 2 Tbsp Minced Garlic
- 1 Cup Red Lentils, Dry
- 1 Cup Water
- 2 Cup Tomato Sauce
- 2 Tsp Basil
- 1 Cup Whipping Cream
- ½ Cup Grated Parmesan Cheese
What to do:
- Reserve ½ cup of pasta water before draining. Set pasta aside.
- In a pot, add 1 cup of water and lentils. Bring to a rolling boil, stirring occasionally. Reduce heat to low; cover and cook for 30 - 45 minutes.
- Heat olive oil in a large pan over medium heat.
- Sauté onion, celery, and carrots for 3–4 minutes until soft, then add garlic and cook for another minute.
- Add tomato sauce and basil. Simmer for 10–15 minutes, stirring occasionally, to let flavors develop. Turn off the heat and let the sauce cool slightly (to prevent curdling).
- Stir in Greek yogurt until fully combined.
- If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
- Toss the cooked pasta and lentils in the sauce until well coated.
- Sprinkle Parmesan and mix well.
