Roaring Rosé Lentil Pasta

SERVES: 6 portions

RECIPE TIME: 1 hour – 1 hour 10 minutes

What you need:

  • 1 ½ Cup Whole Wheat Penne Pasta, Dry
  • 2 Tsp Olive Oil
  • ½ Cup Diced Onion
  • ½ Cup Diced Celery
  • ½ Cup Diced Carrot
  • 2 Tbsp Minced Garlic
  • 1 Cup Red Lentils, Dry
  • 1 Cup Water
  • 2 Cup Tomato Sauce
  • 2 Tsp Basil
  • 1 Cup Whipping Cream
  • ½ Cup Grated Parmesan Cheese

What to do:

  1. Reserve ½ cup of pasta water before draining. Set pasta aside.
  2. In a pot, add 1 cup of water and lentils. Bring to a rolling boil, stirring occasionally. Reduce heat to low; cover and cook for 30 - 45 minutes.
  3. Heat olive oil in a large pan over medium heat.
  4. Sauté onion, celery, and carrots for 3–4 minutes until soft, then add garlic and cook for another minute.
  5. Add tomato sauce and basil. Simmer for 10–15 minutes, stirring occasionally, to let flavors develop. Turn off the heat and let the sauce cool slightly (to prevent curdling).
  6. Stir in Greek yogurt until fully combined.
  7. If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
  8. Toss the cooked pasta and lentils in the sauce until well coated.
  9. Sprinkle Parmesan and mix well.
