Quinoa and Brown Rice

SERVES: 6 portions

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1 ½ Cup Brown Rice, Dry
  • ¾ Cup Quinoa, Dry
  • 2 Tbsp Veggie Oil
  • ½ Cup Diced Onion
  • 2 Tbsp Minced Garlic
  • 3 Cup Veggie Stock
  • 2 Bay Leaf

What to do:

  1. Make sure to wash your hands before you begin.
  2. Heat oil in a large pot and cook the onions and garlic until translucent.
  3. Add veggie stock, brown rice, quinoa and bay leaves, bring to a boil; cover with tight-fitting lid.
  4. Cook on low heat until rice and quinoa are tender and all the stock is absorbed, about 20-30 minutes.
  5. Remove from heat and let stand covered for about 5 minutes. Fluff with a fork.
