What you need:
- 1 1/2 Cup Whole Wheat Flour
- 2 Tbsp Flax meal
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 Cup Veggie Oil
- 6 Tbsp Water
- 1 tsp Vanilla
- 1 Cup Chopped Pineapple
- 1 Cup Pineapple Juice
- 1/3 Cup Shredded Coconut
- 1/4 Cup Brown Sugar
What to do:
- Make sure to wash your hands before you begin.
- Preheat the oven to 350F.
- Mix the flax flour and water in small bowl, let it sit for at least 15 min
- Caramelize the chopped pineapples first. Toss the chopped pineapple in the brown sugar. Make sure the pineapple is drained and dried before adding the brown sugar. Place the pineapple mixture on the baking tray lined with parchment paper and caramelize in the oven at 350F for approximately 30 minutes or until it is dry or a bit brown.
- In a large bowl, add the canola oil, vanilla extract, pineapple juice, salt and sugar. Mix until incorporated well.
- In a separate bowl, combine the flour, baking soda, baking powder, flax meal and shredded coconut.
- Add the dry mixture into the liquid mixture and mix until incorporated well.
- Gently add the caramelized pineapples and mix for another minute until well combined.
- Spoon mixture into a lined muffin tin.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the muffin comes out clean.
- Cool pan for 10 minutes.
