What you need:
- 2 Cup Quick Oat
- 1 Cup Whole Wheat Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 Cup Light Brown Sugar, Packed
- 1/4 Cup Unsalted Butter, Melted
- 1/2 Cup Wow Butter
- 1/3 Cup Maple Syrup
- 1 Tbsp Flax Meal
- 3 Tbsp Water
- 1 Tsp Vanilla
What to do:
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a large bowl, combine the rolled oats, whole wheat flour, baking soda, and salt. Stir until evenly mixed.
- In a separate bowl, whisk together the brown sugar, melted butter, peanut butter, maple syrup, flax egg, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients. Stir until everything is just combined.
- Transfer the mixture into the prepared pan. Press it firmly into an even layer using the back of a spatula. Bake in the preheated oven for 20–25 minutes, or until the edges are lightly golden. The center should still be soft and chewy.
- Remove the pan from the oven and let the mixture cool completely on a wire rack in the pan. Once cool, lift out the mixture using the parchment paper (if used) and slice into bars of your desired size.
- Store any leftovers in an airtight container at room temperature for up to 3 days. For longer storage, these bars can be frozen and enjoyed later—just thaw at room temperature.
