Okey Dokey Oat Square

SERVES: 6 portions

RECIPE TIME: 50–60 minutes

What you need:

  • 2 Cup Quick Oat
  • 1 Cup Whole Wheat Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 Cup Light Brown Sugar, Packed
  • 1/4 Cup Unsalted Butter, Melted
  • 1/2 Cup Wow Butter
  • 1/3 Cup Maple Syrup
  • 1 Tbsp Flax Meal
  • 3 Tbsp Water
  • 1 Tsp Vanilla

What to do:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large bowl, combine the rolled oats, whole wheat flour, baking soda, and salt. Stir until evenly mixed.
  3. In a separate bowl, whisk together the brown sugar, melted butter, peanut butter, maple syrup, flax egg, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir until everything is just combined.
  5. Transfer the mixture into the prepared pan. Press it firmly into an even layer using the back of a spatula. Bake in the preheated oven for 20–25 minutes, or until the edges are lightly golden. The center should still be soft and chewy.
  6. Remove the pan from the oven and let the mixture cool completely on a wire rack in the pan. Once cool, lift out the mixture using the parchment paper (if used) and slice into bars of your desired size.
  7. Store any leftovers in an airtight container at room temperature for up to 3 days. For longer storage, these bars can be frozen and enjoyed later—just thaw at room temperature.
