Morning Glory Muffin

SERVES: 24 portions

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1¾ Cup Whole Wheat Flour
  • ½ Tbsp Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp Sea Salt
  • ½ Tsp Cinnamon
  • ½ Tsp Nutmeg
  • 1 Cup Brown Sugar
  • ½ Tbsp Vanilla
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ Cup Veggie Oil
  • 1 Cup Grated Apple
  • ¼ Cup Shredded Coconut
  • ¼ Cup Dried Cranberries
  • ½ Cup Grated Carrot

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F
  3. Mix the flax flour and water in a small bowl, let it sit for at least 15 min.
  4. Mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium sized bowl.
  5. In a large bowl mix the flax mixture, brown sugar, vanilla and vegetable oil. Slowly add dry ingredients to wet, stirring until smooth and moist.
  6. Stir in grated apples, coconut, dried cranberries and grated carrots. Add water if necessary.
  7. Pour mixture into parchment lined muffin pan and bake for 25-30 minutes.
