Molten Veggie Sub

SERVES: 6 portions

RECIPE TIME: 45 Mins

What you need:

  • 2 Lb Soaked Pinto Bean
  • 2 Tbsp Minced Garlic
  • ¼ Cup Bread Crumbs
  • 3 Tbsp Tomato Paste
  • ¼ Cup Diced Onion
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Veggie Oil
  • 1 Cup Diced Onion
  • 1 Cup Diced Celery
  • 2 Cup Tomato Sauce
  • 1 Cup Diced Tomato
  • 2 Tbsp Basil
  • 6 Whole Wheat Roll

What to do:

  1. Make sure you wash your hands before you begin.
  2. Preheat oven to 350F. Line a baking sheet with parchment paper.
  3. Drain, rise and puree the beans with a food processor until desired burger texture is reached.
  4. Stir in the rest of the ingredients until combined.
  5. Form into veggie balls.
  6. Bake for 20 minutes, flipping halfway.
  7. In a large skillet heat veggie oil over medium heat. Add onions, celery and garlic and cook until translucent. Add all remaining ingredients and simmer sauce for 30 minutes.
  8. Add veggie balls to tomato sauce.
  9. Serve between a whole wheat roll.
