Lucky Lemon Couscous

SERVES: 4 portions

RECIPE TIME: 10–15 minutes

What you need:

  • 1¼ cups Veggie Stock
  • 1 Tbsp Olive Oil
  • 1 cup Couscous
  • 1 Tbsp Lemon Juice

What to do:

  1. In a small saucepan, bring veggie stock to a boil. Add olive oil.
  2. Remove from heat, stir in couscous, cover, and let sit for 5 min.
  3. Fluff couscous with a fork and stir in lemon juice.
