Lemon Raspberry Loaf

SERVES: 16 portions

What you need:

  • 1 ½ Cup Whole Wheat Flour
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ Tsp Baking Soda
  • ¼ Tsp Sea Salt
  • 1 Cup Raspberry
  • 1 Cup Brown Sugar
  • 1/3 Cup Veggie Oil
  • ¼ Tsp Vanilla
  • ¼ Cup Lemon Juice

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. Mix the flax flour and water in a small bowl, let it sit for at least 15 min.
  4. In a large bowl, mix the flour, baking soda and sea salt.
  5. In a separate bowl, mix the lemon juice, veggie oil, flax mixture, vanilla and brown sugar.
  6. Stir the oil mixture into the flour mixture just until moist.
  7. Fold in the raspberries.
  8. Pour mixture into a parchment lined baking tray.
  9. Bake for 30-40 minutes or until a toothpick inserted into centre of the loaf comes out clean.
  10. Cool pan for 10 minutes.
