Healthy Herbivore Jumble

SERVES: 6 portions

RECIPE TIME: 40 Minutes

What you need:

  • 1 Cup Dry Red Lentil
  • 1 Tbsp Veggie Oil
  • ½ Cup Diced Onion
  • 2 Tbsp Minced Garlic
  • ½ Cup Diced Celery
  • ½ Diced Potato
  • ½ Cup Carrot
  • 3 Cup Veggie Stock
  • 2 Tbsp Lemon Juice
  • 1 Tsp Cumin
  • 1 Tsp Ginger

What to do:

  1. Be sure to wash your hands before you begin.
  2. Cook off red lentils.
  3. Heat veggie oil in large pot, add garlic and onions and cook until translucent.
  4. Add lentils, celery, potato, carrot, veggie stock and spices. Bring to a simmer and cook for about 20 minutes until veggies are tender.
  5. Add lemon juice.
  6. Cook for 10 minutes until heated through.
