What you need:
- 1 Cup Dry Red Lentil
- 1 Tbsp Veggie Oil
- ½ Cup Diced Onion
- 2 Tbsp Minced Garlic
- ½ Cup Diced Celery
- ½ Diced Potato
- ½ Cup Carrot
- 3 Cup Veggie Stock
- 2 Tbsp Lemon Juice
- 1 Tsp Cumin
- 1 Tsp Ginger
What to do:
- Be sure to wash your hands before you begin.
- Cook off red lentils.
- Heat veggie oil in large pot, add garlic and onions and cook until translucent.
- Add lentils, celery, potato, carrot, veggie stock and spices. Bring to a simmer and cook for about 20 minutes until veggies are tender.
- Add lemon juice.
- Cook for 10 minutes until heated through.
