Mad Mirepoix Soup

SERVES: 6 portions

RECIPE TIME: 30 mins

What you need:

  • 1 Tbsp Olive Oil
  • 1 Tbsp Minced Garlic
  • 1 Cup Diced Onion
  • 1 Cup Diced Carrot
  • 1 Cup Diced Celery
  • 1 Cup Diced Potato
  • 1 Tsp Thyme
  • 2 Bay Leaves
  • 3 Cups Veggie Stock
  • ½ Cup Corn
  • ½ Cup Peas

What to do:

  1. Make sure to wash your hands before you begin
  2. Peel and cut all the veggies into small cubes
  3. Heat oil in a pot adding the garlic, onions, carrots, celery, potato, thyme and bay leaves cooking for about 5-8 minutes
  4. Add the stock and let the soup simmer for 20 minutes. Add the corn and peas in the last 5 minutes
  5. Garnish with fresh herbs and serve
