What you need:
- 1 Tbsp Olive Oil
- 1 Tbsp Minced Garlic
- 1 Cup Diced Onion
- 1 Cup Diced Carrot
- 1 Cup Diced Celery
- 1 Cup Diced Potato
- 1 Tsp Thyme
- 2 Bay Leaves
- 3 Cups Veggie Stock
- ½ Cup Corn
- ½ Cup Peas
What to do:
- Make sure to wash your hands before you begin
- Peel and cut all the veggies into small cubes
- Heat oil in a pot adding the garlic, onions, carrots, celery, potato, thyme and bay leaves cooking for about 5-8 minutes
- Add the stock and let the soup simmer for 20 minutes. Add the corn and peas in the last 5 minutes
- Garnish with fresh herbs and serve
