What you need:
- 6 Fish Fillet
- 1 Tbsp Olive Oil
- ½ Cup Diced Onion
- 1 Cup Diced Tomato
- 1 Tbsp Minced Garlic
- 1 Tbsp Dried Thyme
- 1 Bay Leaf
What to do:
- Make sure to wash your hands before you begin.
- Preheat oven to 350F.
- Heat oil in saucepan; add onion and sauté for 5 minutes, or softened. Add garlic, tomatoes, thyme and bay leaf. Simmer uncovered over medium heat for 15 minutes. Remove bay leaf.
- Place fish fillets in a single layer in parchment lined shallow baking pan. Pour sauce over fish. Bake for about 20 minutes, until fish is cooked through.
