Cranberry Winter Loaf

SERVES: 24 portions

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1¾ Cup Whole Wheat Flour
  • ½ Tbsp Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp Sea Salt
  • 2 Tsp Cinnamon
  • 1 Tsp Ginger
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ Cup Veggie Oil
  • 1 Cup Dried Cranberries
  • 1 Cup Brown Sugar
  • ½ Cup Applesauce

What to do:

  1. Make sure you wash your hands before you begin.
  2. Preheat oven to 375F.
  3. Line muffin cups with liners.
  4. Mix the flax flour and water in a small bowl, let it sit for at least 15 min.
  5. Stir together the flour, baking powder, baking soda, brown sugar, salt, cinnamon, and ginger in a large bowl.
  6. Mix the flax mixture and veggie oil in a separate mixing bowl. Then add applesauce and continue beating.
  7. Slowly add dry ingredients to the mixture. Stir until smooth and moist.
  8. Add cranberries evenly throughout the batter.
  9. Spoon batter into liners.
  10. Bake for 20-25 minutes, until browned on the top.
