What you need:
- 1¾ Cup Whole Wheat Flour
- ½ Tbsp Baking Powder
- ½ Tsp Baking Soda
- ½ Tsp Sea Salt
- 2 Tsp Cinnamon
- 1 Tsp Ginger
- 2 Tbsp Flax Flour
- 6 Tbsp Water
- ½ Cup Veggie Oil
- 1 Cup Dried Cranberries
- 1 Cup Brown Sugar
- ½ Cup Applesauce
What to do:
- Make sure you wash your hands before you begin.
- Preheat oven to 375F.
- Line muffin cups with liners.
- Mix the flax flour and water in a small bowl, let it sit for at least 15 min.
- Stir together the flour, baking powder, baking soda, brown sugar, salt, cinnamon, and ginger in a large bowl.
- Mix the flax mixture and veggie oil in a separate mixing bowl. Then add applesauce and continue beating.
- Slowly add dry ingredients to the mixture. Stir until smooth and moist.
- Add cranberries evenly throughout the batter.
- Spoon batter into liners.
- Bake for 20-25 minutes, until browned on the top.
