What you need:
- 3 cups Diced Carrots
- 1 ½ cups Chickpeas
- 2 Tbsp Olive Oil
- 1 tsp Minced Garlic
- 2 Tbsp Lemon Juice
- 2–4 Tbsp Water, as needed for smooth texture
What to do:
- Steam carrots until soft (8–10 min). Drain well.
- In a food processor, combine cooked carrots, chickpeas, olive oil, garlic, and lemon juice.
- Blend until very smooth, adding water a little at a time until creamy.
- Taste and adjust: add more lemon for brightness, or a drizzle of olive oil for extra smoothness.
- Serve with pita wedges.
