What you need:
- 1¾ Cup Whole Wheat Flour
- ½ Tbsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Sea Salt
- ¼ tsp Allspice
- ¼ tsp Nutmeg
- 1 Cup Brown Sugar
- ½ tsp Cinnamon
- 2 Eggs
- ½ Cup Shredded Carrot
- ½ Veggie Oil
- ¼ Cup Shredded Coconut
What to do:
- Make sure to wash your hands before you begin. Pre heat oven to 350°F
- Mix whole wheat flour, baking powder, baking soda, spices, brown sugar, shredded carrots, shredded coconut, and salt in a large bowl.
- In a separate mixing bowl whisk eggs and veggie oil. Slowly add to dry ingredients stirring until smooth and moist, adjust with water as needed.
- Pour mixture into a parchment lined loaf pan and bake for 25-30 min.
