Carrot Coconut Muffin

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1¾ Cup Whole Wheat Flour
  • ½ Tbsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Sea Salt
  • ¼ tsp Allspice
  • ¼ tsp Nutmeg
  • 1 Cup Brown Sugar
  • ½ tsp Cinnamon
  • 2 Eggs
  • ½ Cup Shredded Carrot
  • ½ Veggie Oil
  • ¼ Cup Shredded Coconut

What to do:

  1. Make sure to wash your hands before you begin. Pre heat oven to 350°F
  2. Mix whole wheat flour, baking powder, baking soda, spices, brown sugar, shredded carrots, shredded coconut, and salt in a large bowl.
  3. In a separate mixing bowl whisk eggs and veggie oil. Slowly add to dry ingredients stirring until smooth and moist, adjust with water as needed.
  4. Pour mixture into a parchment lined loaf pan and bake for 25-30 min.
