Carrot Coconut Muffin

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1¾ Cup Whole Wheat Flour
  • ½ Tbsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Sea Salt
  • ¼ tsp Allspice
  • ¼ tsp Nutmeg
  • 1 Cup Brown Sugar
  • ½ tsp Cinnamon
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ Cup Shredded Carrot
  • ½ Veggie Oil
  • ¼ Cup Shredded Coconut

What to do:

  1. Make sure to wash your hands before you begin. Pre heat oven to 350°F
  2. Add the flax flour and water in a small bowl, mix together and let let it sit for at least 15 min.
  3. Mix whole wheat flour, baking powder, baking soda, spices, brown sugar, shredded carrots, shredded coconut, and salt in a large bowl.
  4. In a separate mixing bowl whisk flax flour mixture and veggie oil. Slowly add to dry ingredients stirring until smooth and moist, adjust with water as needed.
  5. Pour mixture into a parchment lined loaf pan and bake for 25-30 min.
  6. Let it cool in the pan for 10 minutes.
