Classy Carrot Muffin

RECIPE TIME: 20 - 30 Minutes

What you need:

  • 1¾ Cup Whole Wheat Flour
  • ½ Tbsp Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp Sea Salt
  • ¼ Tsp Allspice
  • ¼ Tsp Nutmeg
  • 1 Cup Brown Sugar
  • ½ Tsp Cinnamon
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • 1 Cup Shredded Carrot
  • ½ Cup Veggie Oil

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350°F
  3. Mix the flax flour and water in s small bowl, let it sit for at least 15 min.
  4. Mix whole wheat flour, baking powder, baking soda, spices, brown sugar, shredded carrots and salt in a large bowl.
  5. In a separate mixing bowl whisk flax mixture and veggie oil. Slowly add to dry ingredients stirring until smooth and moist, adjust with water as needed.
  6. Pour mixture into a parchment lined loaf pan and bake for 25-30 min.
  7. Let cool and cut into finger sized pieces.
