What you need:
- 1¾ Cup Whole Wheat Flour
- ½ Tbsp Baking Powder
- ½ Tsp Baking Soda
- ½ Tsp Sea Salt
- ¼ Tsp Allspice
- ¼ Tsp Nutmeg
- 1 Cup Brown Sugar
- ½ Tsp Cinnamon
- 2 Tbsp Flax Flour
- 6 Tbsp Water
- ½ Cup Shredded Carrot
- ½ Veggie Oil
What to do:
- Make sure to wash your hands before you begin. Pre heat oven to 350°F
- Add the flax flour and water in a small bowl, mix together and let let it sit for at least 15 min.
- Mix whole wheat flour, baking powder, baking soda, spices, brown sugar, shredded carrots, shredded coconut, and salt in a large bowl.
- In a separate mixing bowl whisk flax flour mixture and veggie oil. Slowly add to dry ingredients stirring until smooth and moist, adjust with water as needed.
- Pour mixture into a parchment lined loaf pan and bake for 25-30 min.
- Let it cool in the pan for 10 minutes.
