Busy Bruschetta & Crackers

SERVES: 6 portions

RECIPE TIME: 15–20 minutes

What you need:

  • 4 Plum Tomatoes, Diced
  • 1 Clove Garlic, Minced
  • ¼ Red Onion, Diced
  • 2 Tbsp Fresh Parsley
  • ¼ Cup Fresh Basil, Chopped
  • 2 Tbsp Extra Virgin Olive Oil
  • Balsamic Vinegar To Drizzle (Optional)

What to do:

  1. In a bowl, mix diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar (if using).
  2. Let it sit for at least 10–15 minutes for flavours to meld.
  3. Serve immediately with toasted garlic bread!
