Blushing Blueberry Loaf

SERVES: 16 portions

RECIPE TIME: 40 - 50 Minutes

What you need:

  • 1 ½ Cup Whole Wheat Flour
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 Cup Blueberries
  • 1 Cup Brown Sugar
  • ¼ Cup Veggie Oil
  • ½ Tbsp Cinnamon
  • ¼ tsp Vanilla Extract

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. Add flax flour and water in a small bowl, mix and let it sit for at least 15 min.
  4. In a large bowl, mix the flour, cinnamon, baking soda, and salt.
  5. In a separate bowl, mix the oil, Falx flour mixture, vanilla and sugar.
  6. Stir the oil mixture into the flour mixture just until moist.
  7. Fold in the blueberries.
  8. Pour mixture into a parchment-lined baking tray.
  9. Bake for 30 to 40 minutes or until a toothpick inserted into center of the loaf comes out clean.
  10. Cool pan for 10 minutes.
