Blushing Blueberry Loaf

SERVES: 16 portions

RECIPE TIME: 40 - 50 Minutes

What you need:

  • 1 ½ Cup Whole Wheat Flour
  • 2 Eggs*
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 Cup Blueberries
  • 1 Cup Brown Sugar
  • ¼ Cup Veggie Oil
  • ½ Tbsp Cinnamon
  • ¼ tsp Vanilla Extract

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. In a large bowl, mix the flour, cinnamon, baking soda, and salt.
  4. In a separate bowl, mix the oil, eggs, vanilla and sugar.
  5. Stir the oil mixture into the flour mixture just until moist.
  6. Fold in the blueberries.
  7. Pour mixture into a parchment-lined baking tray.
  8. Bake for 30 to 40 minutes or until a toothpick inserted into centre of the loaf comes out clean.
  9. Cool pan for 10 minutes.
  10. *Substitute with flaxseed meal to make it egg free. For every 1 egg, mix 1 Tbsp of flaxseed meal with 3 Tbsp of water, and allow it to thicken for 15 mins.
