Apple Cinnamon Loaf

SERVES: 16 portions

What you need:

  • 1 ½ Cup Whole Wheat Flour
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 Cup Sugar
  • ¼ tsp Salt
  • 2 Eggs
  • 1 tsp Vanilla
  • ¼ Cup Butter, Unsalted
  • 1 ½ Cup Applesauce

What to do:

  1. Be sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. Line bottom of loaf pan with parchment paper.
  4. In a medium sized bowl combine flour, baking soda, cinnamon, and salt.
  5. In a large mixing bowl beat eggs, vanilla, butter, sugar and applesauce until well combined (2-3 minutes).
  6. Stir in dry ingredients and mix until smooth and moist. Pour batter into loaf pan.
  7. Bake for 45-50 minutes until a toothpick inserted in the centre of loaf comes out clean.
  8. Let cool for 10 minutes.
  9. *Substitute with flaxseed meal to make it egg free. For every 1 egg, mix 1 Tbsp of flaxseed meal with 3 Tbsp of water, and allow it to thicken for 15 mins.
