In a medium sized bowl combine flour, baking soda, cinnamon, and salt.
In a large mixing bowl beat eggs, vanilla, butter, sugar and applesauce until well combined (2-3 minutes).
Stir in dry ingredients and mix until smooth and moist. Pour batter into loaf pan.
Bake for 45-50 minutes until a toothpick inserted in the centre of loaf comes out clean.
Let cool for 10 minutes.
*Substitute with flaxseed meal to make it egg free. For every 1 egg, mix 1 Tbsp of flaxseed meal with 3 Tbsp of water, and allow it to thicken for 15 mins.
